My new bike is great, I love it. I would love more, however, to be able to take off the saddlebags for local rides. It's the LT, so it came with stock bags, windshield and sissy bar. I'm wondering what steps to take to get them off, and if it would require removing the sissy bar as well? I could go wrench on it but it's a day made for riding and I would love to know if someone's done it, how hard it is :)

if you're just going to do local riding maybe consider leaving your saddlebags off if you're going to take them off

The bags are held to the support frame with one screw and two nuts. The support frames are held to the bike with two nuts. Not hard at all.

Yep, easy to remove the bags with an end, box, or socket wrench. Even for local rides I leave mine on since I keep my first aid kit and other emergency supplies in them.
