I use Protect All on everything on my bike, but I don't think I have any real leather. They say it's good on finished leather, but I avoid leather on my vehicles so I suppose I shouldn't even be answering

Most soft bags now days are Naugahyde (which is a vinyl product). In my opinion it's actually more durable than leather, but not quite as strong. You can put just about anything on it, but mink oil will probably waterproof um better than anything else.

Definitely would use mink oil if they are real leather. Keeps it soft and pliable and prevents cracking.
