I strap on a padlocked hard case when I have to haul one around for some reason or other. Less flak from the LEOs and you don't get bug juice and/or road rash all over your gun lol. Iron sights are good. Every time I've hauled something with a scope, it's knocked out of line when I get where I'm going.

I used to haul a sawed off 20 gauge around on the handlebars of an old dirt bike, on the farm, but no need for such a thing outside of the pastures/woods, imo. It was a pain to get to and unstrap and load, too, and the varmints were usually gone before I could draw a bead on 'em. :/

Imo, if you need quick access to a varmint gun, carry a cheap/old revolver on your belt with an empty cylinder under the hammer. >_>

They make gun carriers and such for the ATV crowd. Lots of folks use them when getting out and about for deer season. Maybe something from that venue could be put into use.
