Reset miles on odometer?

I have a custom VN800 Bobber that I have built. It’s finally complete. Taken me 2 years. Bike is old as it’s a 2000 model and my title says it’s exempt from keeping miles recorded.
Since I worked so hard on this bike with blood sweat and tears. I’ll never sell it. But I was wondering if there’s a way to reset my odemeter back to 0 miles? I know traditionally this isn’t legal. But since the frame up restore it’s basically a new bike and I was wondering if there was a way since it’s exempt anyway?
